Silky, garlicky and loaded with Parmesan, this creamy pasta is the ultimate weeknight comfort food. It comes together in one pan in about 25 minutes, yet tastes like something from your favourite Italian restaurant.

Ingredients

  • 12 oz (340 g) fettuccine or your favourite pasta
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more to serve
  • 1/2 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1 cup of pasta water, then drain.
  2. Meanwhile, melt the butter in a large pan over medium heat. Add the garlic and cook for 1 minute until fragrant but not browned.
  3. Pour in the heavy cream and Italian seasoning. Simmer gently for 2 to 3 minutes until slightly thickened.
  4. Reduce the heat to low and whisk in the Parmesan a handful at a time until the sauce is smooth and creamy.
  5. Add the drained pasta to the sauce and toss to coat, loosening with splashes of reserved pasta water until glossy.
  6. Season with salt and black pepper, then serve topped with extra Parmesan, parsley and a pinch of red pepper flakes if you like heat.
