All the cheesy, savoury joy of pizza night with none of the crust — and a serious protein punch. A fluffy egg-and-cottage-cheese base bakes up golden, ready for all your favourite toppings.

Ingredients
- 4 large eggs
- 250 g (1 cup) low-fat cottage cheese
- 50 g (1/2 cup) grated Parmesan
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper
- 120 ml (1/2 cup) pizza sauce or passata
- 150 g (1 1/2 cups) shredded mozzarella
- 80 g (1/2 cup) sliced pepperoni or cooked chicken (optional)
- 1/2 green pepper, diced
- 1/4 red onion, thinly sliced
- Fresh basil, to serve
Instructions
- Preheat the oven to 200°C (400°F). Line a 30 cm pizza tray or oven dish with parchment and lightly oil it.
- Blend the eggs, cottage cheese, Parmesan, Italian seasoning, garlic powder, salt and pepper until smooth.
- Pour onto the prepared tray and spread into an even round.
- Bake for 12–14 minutes until set and lightly golden at the edges.
- Spread the pizza sauce over the base, leaving a small border.
- Top with the mozzarella, pepperoni or chicken, peppers and onion.
- Return to the oven for 8–10 minutes until the cheese is melted and bubbling with golden spots.
- Rest for 3 minutes so it slices cleanly.
- Scatter with fresh basil, slice and serve.
Tips
- Blend the base really smooth — no one will guess there’s cottage cheese in it.
- Pat watery toppings dry so the base stays firm.
- A pizza stone or steel gives an extra-crisp bottom.
